Product description

Vineyards: Poggio ai mori, hill, surrounded by oak forest, humpbacked with two slopes, one to the north-west and the other to the south-east.

Soil: clayey loam with a generous presence of limestone (alberese) on the north-west side, less accentuated and more balanced by schist (galestro) on the south-east facing side.

Harvest: manual with selection of bunches in the field. The grapes come from our best vineyard called “Campacci”.

Winemaking: Halley was born from an idea by Nicolas, the second generation of the company. Born as CRU di San Donatino, the wine was vinified separately in a 20 hl stainless steel tank. The wine was greatly liked by all the people who had the pleasure of tasting it during its maturation process to the point of making it a single-issue label, i.e. 2500 bottles and never again… or perhaps in 76 years like the comet.
The grapes are destemmed and pressed, with a maceration of 25 days and pressed very lightly. Fermentation occurs spontaneously without temperature control.

Elevàge: the wine was aged in a 20hl stainless steel tank for 3 years without ever being decanted, after which it spent 6 months in the bottle.

Winemaker’s notes : Pale ruby red colour.
Penetrating nose and smells of passion flower and iris, orange zest and wild strawberries.
The taste is very intense, it tastes like pollen, the strawberry returns accompanied by a sweet spiciness like turmeric, refreshing and great great elegance.
